There were a total of three hulls in this class.
The first hull launched as the battleship Yamato, which we don't have to go into details for
The second hull launched as the battleship Musashi. Musashi was the ship that brought Yamamoto's ashes back to Japan and participated in the Leyte Gulf naval battle (Battle of Sibuyan Sea, specifically), among others.
The third hull was converted to carrier Shinano, which was sunk only a handful of miles out of Yokosuka. She sank like a rock because her watertight doors were not installed yet. More details here:

Thus, there were actually three hulls, though only two were considered "Yamato-class". The third hull is considered the first ship in a new class of warships since Shinano was not at all a battleship.
