This topic sort of poked me to find out how to type those characters on my Mac. Are there any Mac users around here besides me? Anyway, here's a few I found:

ß - option-s
ä - option-u then a
Ä - option-u then shift-a
ö - option-u then o
Ö - option-u then shift-o
ü - option-u then u
Ü - option-u then shift-u

Here's a Nordic character I found while I was at it:

ø - option-o
Ø - option-shift-o
